Ingredients:
- 1 pound fresh green beans, trimmed
- 2 tablespoons butter (or olive oil for a lighter option)
- 1/4 cup sliced almonds
- 2 cloves garlic, minced (optional)
- Salt and pepper, to taste
Instructions:
- Blanch the Green Beans:
- Bring a large pot of salted water to a boil.
- Add the green beans and cook for 3-4 minutes until tender-crisp.
- Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again after 1-2 minutes.
- Toast the Almonds:
- In a large skillet over medium heat, melt the butter.
- Add the sliced almonds and stir frequently until they are golden brown (about 2-3 minutes). Be careful not to burn them.
- Sauté the Green Beans:
- Add the blanched green beans to the skillet with the toasted almonds.
- If using garlic, add it now and sauté for 1 more minute.
- Season with salt and pepper. Toss well to coat the beans in butter and almonds.
- Serve:
- Transfer to a serving dish and enjoy!
This quick and elegant side dish pairs beautifully with chicken, fish, or any holiday meal.
