Simple, yet Festive: Green Bean Almondine

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons butter (or olive oil for a lighter option)
  • 1/4 cup sliced almonds
  • 2 cloves garlic, minced (optional)
  • Salt and pepper, to taste

Instructions:

  1. Blanch the Green Beans:
    • Bring a large pot of salted water to a boil.
    • Add the green beans and cook for 3-4 minutes until tender-crisp.
    • Drain and immediately transfer the beans to a bowl of ice water to stop the cooking process. Drain again after 1-2 minutes.
  2. Toast the Almonds:
    • In a large skillet over medium heat, melt the butter.
    • Add the sliced almonds and stir frequently until they are golden brown (about 2-3 minutes). Be careful not to burn them.
  3. Sauté the Green Beans:
    • Add the blanched green beans to the skillet with the toasted almonds.
    • If using garlic, add it now and sauté for 1 more minute.
    • Season with salt and pepper. Toss well to coat the beans in butter and almonds.
  4. Serve:
    • Transfer to a serving dish and enjoy!

This quick and elegant side dish pairs beautifully with chicken, fish, or any holiday meal.
